Tom, our general manager at the Flinders Tavern, has been keeping a secret for years. He has been craving the “Pissaladière Burger” ever since we premiered it, and not just because it’s fun for us to try out our worst French accents. Inspired by the eponymous Southern French speciality, it has a deliciously pungent Kalamata olive tapenade, a creamy and savoury caramelised onion infused cream cheese, and fried onion for textural contrast.
